This sweet white wine is not as sweet and roasted as its neighbor, the Sauternes, as the noble rot has not developed yet. It is a late harvest wine, meaning the grapes are left to overripe on the vine naturally, before being harvested. The Semillion is chosen for its ability to rot, the Sauvignon Blanc for its acidity. Quite sweet, yet with a good acidity and freshness. For aperitif if chilled, or as dessert wine. |
