Vanilla aroma in wine is Vanillin compound from new oak, although is also found in cork. Vanilla is the second most expensive spice after saffron, despite the expense, it is highly valued for its flavor which author Frederic Rosengarten, Jr. described in The Book of Spices as "pure, spicy, and delicate" and its complex floral aroma epicted as a "peculiar bouquet". Wine that has a sweet, distinctive vanilla aroma is typically a characteristic of wine that has been aged in new oak barrels as Pinot Noir and Cabernet Sauvignon (In Bordeaux blends) on origin it can have notes of black currant, blackberry, plum or cherry fruit; chocolate, green pepper, and mint; plus oak and vanilla from the barrels.
